Crock Pot Cilantro Lime Chicken Tacos

As a stay-at-home mom, I’m all about slow cooker meals.
I mean, what’s not to love? You literally dump all your ingredients into the crock pot and you’re done. I love having dinner ready without being in the kitchen right when my husband gets home. It gives me more time to take care of other things and allows me to prepare our meal almost anytime of the day!
If slow cooker recipes are 5 ingredients or less, I’m pretty much sold. When they’re also healthy…yeah, we’ll be having that meal a lot.
What if I told you it was also absolutely delicious?
You need to try this out.
My husband and I love these Crock Pot Cilantro Lime Chicken Tacos.
3 lbs skinless, boneless chicken breast
A generous dash of Adobo
1 16oz jar red salsa (we use Herdez)
Cilantro – one bundle washed and lightly chopped
Juice from 1 small lime
- Place chicken breast at the bottom of your crock pot. Sprinkle Adobo over the top, then cover with your salsa, lime juice and 1/3 of your prepared cilantro.
- Place lid on top and cook on high for 4 hours or low for 6 hours.
- Remove cooked chicken to a separate bowl and shred with two forks. Moisten chicken with liquid from crock pot until desired moisture is reached.
- Serve on tortillas (we use Mission gluten free corn tortillas). Top with cilantro, shredded cheese and avocado.
You can get as creative as you want with these! I’ve heard of putting a drizzle of ranch on top or shredded lettuce to give it even more crunch. Dress them up or dress them down. They’re so tasty either way! They would make a great addition to a pot luck since they can stay hot in your crock pot. My crock pot (like the one pictured below) has a sealing lid making it easy to travel with!
We usually make a side of rice and call it a night.
